- 4 large eggs

For the filling:
- 1 cup of guacamole in pulp
- 100g sliced turkey ham, chicken breast, or smoked salmon
- Cream cheese or Manchego cheese strips (optional)
- Baby spinach or lettuce leaves
- Chili powder or hot sauce (optional)

- Whisk the eggs:
Whisk eggs with milk, salt, and pepper until well combined.
- Cook the egg base:
In a non-stick pan, add a few drops of oil or spray. Pour a thin layer of beaten egg (like making a crepe) and cook over low heat until completely cooked without browning too much. Repeat to make 3-4 egg sheets.
- Assemble the rolls:
- On each egg sheet, spread a generous layer of guacamole in pulp.
- Add strips of ham, cheese, and spinach or lettuce leaves.
- If you want a spicy touch, sprinkle chili powder or add a few drops of sauce.
- Roll carefully and cut into sushi-like pieces or halves.
Serve:
Arrange the rolls on a plate and garnish with a little more guacamole on top, chopped scallions, or sesame seeds.
